Patience, precision, and living cultures.
Discover the philosophy that drives our cheese-making and fermentation school. We believe in honoring traditional techniques while providing clear, structured guidance.
Our Story
How We BeganCulture & Curd was founded with a singular focus: to demystify the art of fermentation and cheese-making. What began as a small series of informal workshops has grown into a dedicated school and supply shop for enthusiasts.
We realized that while the science behind cultures and curds can be complex, the actual process is deeply tactile and intuitive. By breaking down technical barriers, we help students confidently craft artisan cheeses and fermented goods right in their own kitchens.
Today, our curriculum serves everyone from weekend hobbyists to aspiring commercial artisans, all united by a shared respect for living foods.
Our Approach
We focus on three fundamental pillars in every class we teach and every kit we sell. It is never about shortcuts; it is about understanding the environment.
Explore The ShopTime
Fermentation cannot be rushed. We teach our students how to read the signs of readiness, allowing cultures to develop complex flavor profiles naturally over hours or months.
Temperature
Precision matters. From gently warming milk to correctly incubating yogurt, mastering temperature control is the most crucial skill in the artisan's toolkit.
Technique
Handling curds requires a gentle touch. We emphasize proper cutting, stirring, and pressing methods that respect the structural integrity of the cheese.
Tools
Using the right molds, presses, and measuring equipment ensures consistent, repeatable results whether you are an absolute beginner or an experienced maker.
Ingredients & Sourcing
Great cheese starts long before the milk enters the vat. We are strictly committed to sourcing high-quality, unadulterated ingredients for our shop and our classrooms.
Our starter cultures and rennet are carefully selected to ensure robust, predictable acidification. When you buy a kit from us, you receive the exact same professional-grade ingredients we use in our advanced masterclasses.
- Professional-grade mesophilic and thermophilic cultures.
- Non-iodized artisan salts crucial for safe preservation.
- Vegetarian and traditional rennet options.
A Few Notes
Cleanliness
Sanitation is non-negotiable. Successful fermentation requires a pristine environment to ensure that only the desired cultures thrive while unwanted bacteria are entirely eliminated from your equipment.
Record Keeping
Every slight variation in timing, room humidity, or milk temperature alters the final cheese. We encourage all our students to maintain detailed logs of their makes to chart their progress.
Practice
No one creates the perfect wheel on their first try. The true beauty of this craft lies in repetition, careful adjustment, and learning directly from the subtle nuances of each consecutive batch.
